There are some dishes, much like Revenge, that are best served cold. That includes the delicious ingredients in any good Mediterranean Platter. Hot Cucumbers and Hummus are not a good combination. When hummus hits a hot pan it smells like an old sneaker but has a smoked nut taste. In addition to these I added tomato, Feta, Mozzarella, Kalamata Olives, and Olive Oil.
I buttered one side of a medium sized Pita and laid down the cheeses first, the veggies, the hummus and more cheese to hold it together. But apparently it wasn't enough because it soon became a squishy mess. The combined juices produced by the cucumbers, Tomatoes along with the Olive Oil, caused it to liquefy. Flipping it was a disaster with the grilled Pita cracking releasing milky fluid all over the pan which was absorbed by the bread. When I picked it up it fell apart like the Greek Economic Bail Out Plan.
In the future, when using Pita, I'll just stick to the cheese, tomato, and butter. Leave the rest as a side plate.
