The 30 Day Grilled Cheese Challenge: Day 9, "The Easter Egg Massacre"

If you still enjoy the tradition of coloring actual eggs for Easter then they're probably still in your fridge right now. Being a fan of Egg Salad I love it! Except when the coloring gets into the egg and your egg salad looks like somebody vomited skittles and biscuits. Here's another way to enjoy your egg salad AND National Grilled Cheese Month.
I spiced up the egg salad by making a Chipotle Mayo and mixing it in with chunks of Avocado and celery. I laid down some White American Cheese on White Bread, placed a big scoop of the egg salad on top, and covered it with more cheese. When I put the press on this one some of the egg was pushed out on to the pan and it smelled like breakfast. It was pretty creamy and delicious. Unfortunately, on the way to work this morning, I was trapped in my car with my nerve gas-like farts. So, don't plan any dates after eating this.
