The 30 Day Grilled Cheese Challenge: Day 7, "The Warsaw Pack"

I keep trying to make a lighter Grilled Cheese Sandwich to give my poor colon a break but keep failing deliciously. This one started out as the "Yo Soy Fiesta" with just Cheddar and Salsa but I heard the calling from the my Eastern European Roots. There is nothing not to love about Pierogies. My family always made them filled with mashed potatoes and cheese but like the Grilled Cheese Sandwich you can always work in your own variations. Plus, loosely translated in Slovak, the word Pierogi means "Party Pie" Really? How can you not love that!
I used Shredded Cheddar and layered two large Pierogies on top, then a dollop of mild fresh Salsa, then more Cheddar. Careful with the Press on this one because you may rupture the Pierogi and have mashed potato everywhere. Almost like a huge cheesy zit. (Wow, that's a sh***y selling point.) You should also let this one cool for a few minutes because the Pierogi filling could be hot. It also makes cutting it easier. I'm glad I added the salsa because I knew the Cheese, Dough, and Mashed Potatoes would need to be cut with something lively. I was also very sleepy after eating this. Probably just my heart struggling to pump what must be close to Velveeta in my veins.
